Mini Chocolate Strawberry Pancakes (GF & VG)

In a bowl, whisk together the oat flour, cacao powder, chocolate protein powder, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, flax, and oil. Combine the wet ingredients with the dry ingredients. Dip strawberries, cut into coins, into the pancake batter. Bring a greased pan to medium heat and cook the mini pancakes on both sides until done. Top with melted chocolate, cacao nibs or chocolate chips, and more fresh strawberries.
