Hot Chocolate Pancakes

First, prepare the ganache: combine chocolate chips and dairy-free milk in a microwave-safe bowl and heat until melted, stirring until smooth. Set aside. For the pancakes, in a small bowl, mix together dairy-free milk and apple cider vinegar; set aside for 10 minutes. In a separate bowl, whisk together the flour, baking powder, hot chocolate mix, granulated sugar, and sea salt (all dry ingredients). After the dairy-free milk mixture has settled, whisk in the melted coconut oil and egg. Add the wet ingredients to the dry ingredients and fold together with a rubber spatula, being careful not to over mix. Cook pancakes on a griddle until golden brown on both sides. Once cooked, top with the prepared chocolate ganache, additional chocolate chips, and marshmallows.
