Chocolate Peanut Butter Strawberry Chia Pudding Parfait

For the Pudding: Add all the pudding ingredients (dairy-free milk, chia seeds, cacao powder, chocolate protein powder, maple syrup, optional vanilla extract, optional maca powder) to a blender. Blend until smooth and creamy. Place in the refrigerator overnight to chill and set.

For the Chocolate Granola: In a small bowl, mix together the rolled oats, chopped almonds/nuts, cacao powder, and sea salt. Melt the coconut oil in a pan on medium heat. Add in the oat-nut mixture and maple syrup to the pan. Cook for about 10 minutes, making sure to stir frequently until the oats are well toasted.

To Assemble the Parfait: Layer the chocolate chia pudding, chocolate granola, peanut butter, and fresh strawberries in a glass or bowl.
