Chocolate Peanut Butter Oatmeal Cookie Bars

preheat oven to 350F and prepare a baking dish with parchment paper. in a large bowl, whisk together the eggs, coconut sugar, peanut butter, coconut oil, and vanilla until fully combined. mix in the oat flour, rolled oats, baking soda, and salt. once combined, fold in the chocolate chips. the batter will be pretty thick. spread batter onto the baking dish and place in the oven to bake for 20-25 min, or just until the edges are done. (the middle may look a bit underdone but they will set once cooled). let cool for at least 20 min before serving. cut into squares and enjoy!
